StEvE, There must be hundreds of good jambalaya recipes and with any luck you will get a good selection to choose from. I've sort of given up on recipes and make the dish when I have some appropriate stuff on hand to use. One thing I've found that really seems to make a big difference in the meal is the inclusion of some good sausage. My advice to you, regardless of what recipe you settle on, would be to put whatever sausage you can get that has the most heat into the mix....italian sausage, andouille, etc. Depending on where you live, you might even be able to lay your hands on a sausage that includes habeneros in the ingredients.
