I didn't have anything planned for tonights dinner but I had to come up with something. So, I made quesadillas. My hubby loves when I make them. I just use up leftovers, it is a good way to do that. So this is what I did: I had some leftover salsa, cooked baby potatoes, some shiitake mushrooms and some button mushrooms and some soy "chorizo sausage". I made 3 different kinds of quesadillas with these simple ingredients, some shredded cheese and some tortillas. I cooked some of the soy sausage with some zucchini. When they were slightly browned, I put them on a flour tortilla with some leftover salsa and some of the cheese. The soy chorizo was pretty spicy as it was. The second one had cooked shiitake and button mushrooms with some of the cooked potato, one serrano pepper (only half had seeds) chopped and some of the cheese and salsa. The third had some of the cooked mushroom mixture and the serrano, no potato and some salsa and cheese. All three were mightly tasty with some habanero-roasted garlic spread on them and some chopped cilantro. Mmmmmm....good. RisaG
