Grace makes good Jerk Seasoning which I use when I can't be bothered to make my own (happy to share recipe if anyone wants it). Incidentally but interestingly, a Trinidadian of my acquaintance tells me that Scotch Bonnets are universally known as 'Cayennes' in Trinidad. Piers
