Mike, for some New Mexican style food, you could try Arriba on the north side of Camelback at about 18th Street - tasty food, good salsas and El Yucateco on the tables. Their quesadilla with Hatch chiles is very tasty and amazingly hot for only using green chiles. Many of my chile consuming friends keep recommending Los Dos Molinos - there are two of them, one about a half mile north of Northern Ave. on Central Ave and the other somewhere on Alma School in Mesa. The brewpub, Coyote Springs (sw corner of 20th Street and Camelback) used to offer some really good wings - tasty and very hot (4 and I was in an endorphin high) ... I think they serve them tamer now, but I know you can get them hotter than they list on their menu. There are a number of chain fast food burrito places around town (all locally refered to as "Berto's" because they all (or most) have names that end in "berto" and they are mostly interchangeable) that have remarkably good burros - I've never had a poor one and I eat at one or another fairly often. Sorry I can't give you a longer list of spots, but I don't eat out that much. As an aside - while we have considerably more heat available at our restaurants here in Phoenix than the benighted places back east, the normal run of Mexican food around here is (of course) northern Sonoran style which is somewhat to a bunch milder than you will find in New Mexico ....
