Thermostatic control allows drying at very low temperatures to preserve flavor and aromas -- humidity where I live is low enough I usually dry chiles at 100-105 F., at which temp most chile types dry to crisp within 24 hours. No turning, rotating, shifting of contents/trays is required. Easy to clean. Square footprint, for efficient usage of space.
