Melinda, Oh yeah.....this is one of my fav recipes! Best with Thresher, will work with Black Tip. take x lbs of shark. find tupperware container big enough to hold said x lbs pour in liberal amounts of terriyaki sauce. pour in 1/3 amount of maple syrup (REAL stuff, mind you) take four fresh habs/lb, chop fine take four fresh jalapenos/lb, chop fine take four fresh serranos/lb, chop fine put peppers in sauce, stir in take shark, put in sauce. Should be deep enough to cover entire shark fillets seal container, put in fridge. wait 12-24 hours light bbq. heat. get beer or nice chardonnay. enjoy it (this is an important step that simply cannot be sidestepped) while waiting for grill to heat (I usually hit the middle of the gauge). put shark on grill. when side LIGHTLY seared, pour a BIT of sauce on top of sharks. close lid asap (this will cause some serious smoke, I assure you). Wait about 2 minutes. Flip steaks. Pour liberal amount of sauce on steaks, close lid asap. repeat pouring until steak is done. I've been doing this recipe (somewhat of a combination of my own concoction and stealing others ideas) for 15 years, and have never had anyone say anything but great things about it. After they manage to put out the fire in their mouth, that is (evil grin).
