Hi, I'm very new at this. I don't know much about peppers except I like to eat them or food seasoned with them. I don't know much about growing them. I just stick them in the ground and they seem to grow. I have a few questions . When is the best time to pick tabasco's. When they are yellow or wait till they get red. I've seen them both ways. How do you make a good vinager sauce. Are they just put in vinager or is there some kind of cooking process etc. Also what are some other ways to use tabascos. I also have the same questions about habeneros. What are the easiest and best ways to preserve peppers till needed. Too humid to dry here. Thanks Dan
