[CH] Bell Peppers

I'm growing lots of hot peppers, but I'm also growing yellow and red bell peppers for the first time.  Do the green eventually turn red?  Why are the yellow turning orange?  (are these still sweet or am I letting them grow too long?)  Do you know some good receipes for canning????   I'm reading everything I can on peppers, I love them, but like I said - this is a first....  any help I can get would be appreciated!!!!  Thanx sooo much.  Elaine
