Hi Mark, Ah, chipotles! This is the same method I use, except for slitting the peppers to release the moisture. The thick skin on the jalapenos makes it a long process. After smoking (the peppers, that is), they then go into the gas stove, door ajar & on very low, for another day to finish the process. Works great here!
