And they really are critical for Indian (India) cooking. But my crop this year is mostly just mild mild mild. Some years I've gotten really deadly cayennes. But not this year. Better luck next year, I hope. (At least those fatalis are really hot -- too hot to just eat out of hand like we do with all other fresh chiles, for me and my wife anyway). --- Brent
