We use a Mirro pressure cooker/canner which has a weighted jiggler with three different sized holes. The cause the weight to jiggle and release steam at 5, 10, and 15 lbs. At our altitude, most everything is cooked or canned at 15 lbs. There is also a blow-out plug which will supposedly blow if the steam nozzle is blocked. The instructions don't say at what pressure the blow-out plug explodes. Mirro also makes a single pressure cooker\canner.
