Mark asked about how to categorize hot sauces for judging. I'm certainly
no judge, so the best I can do is to pass along how it is done in the
Austin Chronicle Hot Sauce Contest, the 8th annual version of which was
held a month ago.
Individual category: Red sauce, green sauce, special variety.
Restaurant category: Red sauce, green sauce, special variety.
People's Choice Awards: Commercial bottlers: Red sauce, green sauce,
special variety, pepper sauce.
Among the judges were Bruce Auden, Robb Walsh, and Stephan Pyles.
