A great big thank you all, for all of the kind wishes to both of us on our 51st! Here is a sweet potato recipe that I do quite often, and I dont think I have posted it before. 1 2lb sweet potato, peeled, sliced and cooked until still somewhat firm 1 medium white onion, chopped medium fine 3 green jalapeno peppers, seeded and chopped 1 tbls butter or marg 1 tbls olive oil Place oil and marg in skillet, and add the chopped onion and peppers. Simmer until onion is translucent, then add the drained, cooked sweet potato, mash this around and let this all combine together cooking at a low heat. Stir once in awhile so it will not stick to pan. When it is hot all the way through, taste for seasoning, add salt if desired, and freshly ground black pepper or cayenne. This is a very good side dish, and the chiles blend well with the sweet potato. Enjoy....Cheers, Doug in BC
