They are certainly a seasonal treat! When I was in Africa, I learned a mango eating technique. Place the mango on a flat surface like a cutting board, and cut into it all around (score it) with a big knife. Then pull the two sides apart. The pit will remain in one side only. Then use your fingers (or if necessary, your teeth) to hold the pit in place, and twist the other half to release the pit. Then eat what remains in the peel with a spoon. These Yellow Mangoes are perfect for that dessert technique. Rob
