Virginia et all: There's a great substitute for fresh Thai Chiles from
Thailand. They are either green or red (we prefer the taste of the red)
"Pickled Whole Red Chilli" put up in glass jars available at many Asian
markets. Siam Worakit Food L.P., 200 grams at about $1.25 to $1.50. They
are preserved in water, vinegar, sugar and salt and of course the sodium
benzoate.1%
They aren't as fiery as the fresh but have a great true Thai Chile flavor and
I often use them in Thai cooking when I don't have the fresh. You need to
double the quantity compared to fresh. Actually they are great as a snack
straight from the jar.
