For dried chiles, masa and other goodies, try Dodie Miller at the Cool Chile Company (<http://www.coolchile.co.uk>), or if you live in London, she has (or had) a stall at the Portobello Market. Her most recent catalogue included ancho, cascabel, chilhaucle negro, chipotle, costeno amarillo, de arbol, guajillo, habanero, mulato, New Mexico, pasado, pasilla, pasilla de Oaxaca, piquín, choricero, ají amarillo, ají panca, plus various powders. Some of her stuff (chipotles, habaneros, powders, masa) is sold by big Sainsbury's in their Specialty Foods range. The quality of dried peppers is very good - in fact better than I used to get from my local Mexican market in California. For fresh stuff, try Joy at Peppers by Post (01308 897892). Haven't tried her peppers yet, but she's a seasonal grower, so will begin advertising around mid-summer. I called her in December so there was nothing to buy, but I'm on her mailing list in case my home-growns don't pan out. Could disclaim, but if one of these women wants to give me freebies for plugging her stuff, I won't refuse. Cheers, Leicester Virginia
