Dan got a chuckle out of this since I like tofu (especially fried with Prik Nam Pla, Thai chile sauce) and he doesn't like it much but eats it when I put it on the table. He jokingly said that he thinks this may be only part of the explanation...he thinks "it takes a person in mental decline to eat it in the first place and then, of course, they'll go downhill as they age." Of course he will give full details of examples of my "mental decline" to anyone who would like to hear it. Nudge, nudge, wink, wink. He's just razzin' us so no fence tended. For those of you like Doug and me who love our tofu, Doug is the one who taught me how to make good fried tofu. I'm sure he'll share with you, too. The owner of one of my favorite Thai places here in Houston told me his "secret recipe" for good Prik Nam Pla (hope I've remembered everything, I make it using the taste as I go method): Mix up some fish sauce, dash of soy sauce (nothing like soy on soy!), squeeze of lime, couple of dashes of white worchestershire sauce, smidgeon of palm sugar and toss in lots of chopped Thai chiles.
