They sell a special attachment for the grinder for stuffing sausage casings. You can usually buy casings from the butchery section of your supermarket. Homemade sausage is so easy, and the results so much better than store bought, that I encourage you all to try. No need to use casings if you don't want to. Simply roll the sausage meat in cling film, squeezing the air out, and holding on to the loose ends, drag the roll across your counter top so that it twists them up. You now have a cylinder of the type they sell in the US as breakfast sausage, and elsewhere in the world as slicing sausage. Chilling to semi-solid makes it easier to slice. Add your favourite hot stuff - powders, sauces, chopped fresh peppers (for immediate use only) or flakes. Difficult to go wrong. One of MY favourite things to do is add spices typically found in Indian food. Experiment. It is fun. -- --- Regards, Cameron.
