And was gratified with one "Good question!" response. :) is a _smoked_ pepper, commonly but not necessarily a jalapeno. The thick flesh of jalapenos and some other peppers make them more difficult to dry, so smoking them was a (very good) alternative. Mary and I haven't tried any of the straight chipotles mentioned sometimes here. I used canned Embasa Chipotles in Adobo for one recipe that turned out wonderfully. (Grilled halibut in adobo.) So I went and got three more kinds: Herdez, La Costena and La Morena. Haven't tried these yet. Maybe someone else will comment on these? And I'd like some recommendations on just plain, un-canned Chipotles, too, like where to get them. Hope this helps, Riley
