My all time favorite is to peel them and put them in the smoker for an hour or so over your favorite smoke. I like alder and apple for eggs. Then use them to make your favorite deviled egg recipe. I make them by request for our family Christmas gathering every year. Not too many Chile-Heads in that group so I usually make two batches. One hot and one not. They are deeeeelicious either way!
