Dear CH'ers, "Piri-Piri" pops up here on this list now and then. This appeared today in "Tip World:" PIRI PIRI Every cuisine has its hot sauce, and the West Indian version is called piri piri. Here's how you make it. Take two red chili peppers, and combine them with 1 cup olive oil, the zest of one lemon, and one bay leaf in a jar with a tight-fitting lid. Leave it in a warm spot for two or three weeks. The longer you keep the piri piri, the hotter it will get, so bear that in mind.
