To sorta keep this on topic, tonight I made a great salsa, taking 5 tomatillas, removing their little rain coats, simmering them until done, then I put them in a blender, added two serranos, 1/4 of a Texas Sweet, one clove of garlic, half a dozen sprigs of cilantro(the whole thing)and spun the mess until it was a salsa. Put it in the fridge, and lo and behold, when I took it out, it ws so thick I had to add a little water....coulda used white wine, and should have. I placed some of this stuff on a halibut steak, did it in a convection oven at 350 for 20 minutes, and it was heaven....needed salt and freshly ground black pepper, and served it with my version of sweet potatoes and onion(sorry Calvin)and freshly steamed broccoli....not too bad at all.
