I let my habs ripen completely on the plant, as I have had
a problem with them getting moldy on the inside if I try to
let them ripen on the counter for more than a couple of days.
This has the added benefit of producing mature seeds, if you
plan on saving them, that is.
I have never had a problem with mold in the thin-skinned
chiles (C. annuum) and the KT peppers are extremely fast to
turn fully ripe once they start to turn.
