Mark: Wouldn't you know it, the guy had _NO_ habs last week! Just couldn't get any. But he's promised faithfully that he'll have some this Saturday, so it's off to the markets I go, nice and early... I have had some success drying thin-skinned chiles in a microwave. Put them on kitchen paper and microwave on defrost or low, 30 seconds at a time. It doesn't take much time in the oven to finish them off then. But Tom tells me that oven drying lends habs a smokier, roastier (if there is such a word) flavour, and recommends sun-drying habs for a more pure flavour. Should only take a couple of days, with the lovely weather we've been having (for all those non-NSW people, lovely cool, still sunny days. Perfect Autumn weather). I am having trouble locating the company that made my dehydrator. May have moved on. I did buy it 8 or 9 years ago.
