I made some kimchee once that you packed into canning jars and put into the fridge to "age". This seemed much more civilized to me than burying it somewhere to ferment...and knowing me I would forget where it was buried! At any rate I don't have the recipe anymore but it was very good...you could make it as hot as you want. I'm sure some other CH will know what I'mt talking about. You do need a fair amount of space in the fridge, however. This is where the old extra one in the garage comes in handy...along with being a place for the beer and a watermelon!
