[CH] Recipe: Thai Cucumber Salad

I use whatever chile I have available. Tonight I used three jalapenos per
three cucumbers then tossed in some red pepper flakes for color. The original
recipe calls for red chiles (and no peanuts, but I just tossed in the peanuts
and they're great!).
Thai Cucumber Salad
3-4 Large Cucumbers, peeled (I peel to leave a bit of green on) and sliced
very thin
2 (or more, depending on your preference) Thai Dragons, minced
1/4 cup chopped cilantro
2 tablespoons crushed peanuts
6 tablespoons white vinegar
6 tablespoons sugar
3/4 cup water
salt/pepper to taste
Toss the first four ingredients in a bowl. Mix together the vinegar, sugar
and water in a saucepan and bring to a boil. Boil until the sugar is
dissolved. Pour over the cucumber mixture. Add salt and pepper to taste.
Allow to cool then chill.
