Hi, I find a simple way is to pierce the peppers with a fork first (so as to let the vinegar inside so they pickle quicker) Put the peppers in a jar and top up with a mixture of spirit and wine vinegar, a tablespoon of sugar, and few bayleaves and some peppercorns. Once the vinegar is in the jar push down gently on the peppers with the back of a spoon to push some of the air out of the peppers and then slowly release so the peppers "suck" in some of the vinegar. The top-up the jar again with vinegar. Put the lid on tight and leave for 3>4 weeks to pickle. A couple of other tips is to pickle a few batches of peppers in the same vinegar, The vinegar will get some heat in it making it useful for tasty vingarette or for putting pickling onions in it so as to make onions with "ZING" ..
