A colleague of mine at work passed along a brochure announcing the Kwangju Kimchi Festival 2000 in Kwangju, Korea. It will be held from Wednesday, October 18 through Sunday, October 22. The distance is a bit great for me to attend (unless I can wangle a business trip), but I thought I would pass the information along for those who might be in the area. Red pepper was first put into Kimchi during the Chosun Dynasty (1392-1910), according to the brochure. It made the dish more lively and "acted to cover the pungent odor of the fish sauce used for fermentation." URL's are http://www.metro.kwangju.kr and http://www.kimchifestival.com George Nelson
