[CH] Curried Rice

Made this last night.  It was fantastic but needed a few more chiles.
It was served with grilled chicken and Broccoli in oyster sauce.

The garden is doing very well and the freezer is filing up fast.
Any tips on getting rid of whitefly?   I go out every day rub the undersides
of the leaves to get rid of the eggs.
Unfortunately it's still way out of control.
 I've taken some pictures of the beautiful Rocoto's grown from Cameron's
seeds that I'll post soon.

                       Curried Rice with Vegetables

  Amount  Measure       Ingredient -- Preparation Method

  2               Cups  Long grain rice  (Mahatma is a good brand) -- cooked
  1         Tablespoon  Curry powder -- (heaping)
  1           teaspoon  Ginger powder -- (or 1/2 inch knob minced)
  2                     Thai Chiles -- Minced
  3             Cloves  Garlic -- Minced
     1/2         Large  Onion -- Diced small
  1                     Red bell pepper -- Diced small
  1                     Carrot  (cut in half and sliced thinly)
  1              stalk  Celery (sliced thin on the bias)
     1/2           Cup  Frozen peas
     1/4           Cup  Cilantro -- Minced
  4              Whole  Scallion -- Sliced thin
  2        Tablespoons  Dark Soy Sauce
  2        Tablespoons  Oil
                        Tomato -- seeded and diced small

In a heavy pan, heat oil then add curry powder, ginger, and chiles.  Heat
through for 1 minute.
 Add Garlic and rest of the vegetables and cook on Med-High heat for 2
minutes (You want the vegies hot but still crunchy).
Add soy sauce then mix into the cooked hot rice. Mix in the scallion and
cilantro.
The tomato goes on the top of individual servings.
