Made this last night. It was fantastic but needed a few more chiles. It was served with grilled chicken and Broccoli in oyster sauce. The garden is doing very well and the freezer is filing up fast. Serving Size : 0 Preparation Time :0:00 Categories : Curry Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Cups Long grain rice (Mahatma is a good brand) -- cooked 1 Tablespoon Curry powder -- (heaping) 1 teaspoon Ginger powder -- (or 1/2 inch knob minced) 2 Thai Chiles -- Minced 3 Cloves Garlic -- Minced 1/2 Large Onion -- Diced small 1 Red bell pepper -- Diced small 1 Carrot (cut in half and sliced thinly) 1 stalk Celery (sliced thin on the bias) 1/2 Cup Frozen peas 1/4 Cup Cilantro -- Minced 4 Whole Scallion -- Sliced thin 2 Tablespoons Dark Soy Sauce 2 Tablespoons Oil Tomato -- seeded and diced small In a heavy pan, heat oil then add curry powder, ginger, and chiles. Heat through for 1 minute. Add Garlic and rest of the vegetables and cook on Med-High heat for 2 minutes (You want the vegies hot but still crunchy). Add soy sauce then mix into the cooked hot rice. Mix in the scallion and cilantro.
