One of my favorite uses for toasted pumpkin seeds is to use them to make Cilantro Pesto. Spread over cream cheese on a bagel and you have heaven for breakfast. George J. When you have finished carving that Jack O'Lantern...it's time for: Toasted Pumpkin Seeds After you've scooped the seeds from a pumpkin, rinse them under water and remove all the membrane fibers. Blot the seeds with paper towels. Spread them out to dry for at least 3 hours. Toss with a tablespoon of olive oil and place in a single layer on a heavy baking sheet. Bake in a preheated 350 degree F oven, stirring occasionally, until golden brown, about 20 minutes. Sprinkle with salt, chili or curry powder or grated Parmesan cheese. (Of course, you Chile-Heads will know what to do to add a little zip!!)
