[CH] new sauce and 5 recipes

Hi All,

Found a new sauce at the local CostCo called "The Original" Roasted
Raspberry Chipotle Sauce.

Very tasty!! Has an intense raspberry flavor to start followed by the flavor
and heat of the chipotles. Not a "hot" sauce but very good none the less. It
came with a flyer with 5 recipes which I'll add below. I've tried the
Roasted Raspberry Chipotle Cream Cheese Hors d'oeuvres and the Roasted
Raspberry Chipotle Glazed Brie Baked in Pastry, both are wonderful!! Here
are the 5 recipes:

           Beef Tenderloin w/ Roasted Raspberry Chipotle Sauce

   1      small         beef tenderloin
   1      bottle        Roasted Raspberry Chipotle Sauce
                        garlic powder -- to taste
                        freshly ground black pepper -- to taste

Season the tenderloin to taste with the spices.

Broil to desired doneness.

In a small saucepan, warm the sauce, DO NOT boil. When done, slice
tenderloin into serving pieces and place on a platter. Pour sauce over the
meat and serve with noodles. Extra sauce may be served on the side.

            New York Strip w/ Roasted Raspberry Chipotle Sauce

   5      pounds        New York roast -- tied
   1 1/2  tablespoons   sea salt
   3      cloves        fresh garlic -- peeled
     1/4  cup           ground mixed peppercorns -- multi-colored
   2      tablespoons   Colavita olive oil
                        Roasted Raspberry Chipotle Sauce -- as desired
                        fresh rosemary sprigs -- for garnish
                        chopped pecans -- for garnish

Let roast stand at room temperature for 1 hour before cooking.

Preheat oven to 350F.

At each string on top and bottom of roast, cut a 1/2 inch slit halfway
through roast and place a garlic clove into each slit. Place roast in a
large pan. Coat roast with oil and sprinkle liberally with sea salt and
pepper. Reserve the oil, salt and pepperleft in the bottom of the pan. In a
large skillet, over medium heat, the roast ends, top, bottom and sides. Roll
seared roast in the reserved oil, salt and pepper mixture. Place in roasting
pan. Cook, uncovered, until coloris a dark brown - then cover with foil
until internal temperature has reached 130F. Let roast standfor 15 minutes
before carving. Cut strings and serve roast with warmed Roasted Raspberry
Chipotle Sauce. Garnish with fresh rosemary sprigs and chopped pecans.

          Roasted Raspberry Chipotle Glazed Brie Baked in Pastry

   1      sheet         frozen puff pastry -- thawed
   6      tablespoons   Roasted Raspberry Chipotle Sauce
   1      round         brie -- small
   1                    egg -- beaten
   3      tablespoons   chopped pecans -- optional

Butter a baking pan and line with aluminum foil. Roll the pastry on a
lightly floured surface and then cut into 2 circles -- one approximately 8
inches and the other 4 inches in diameter or a little bigger than the round
of brie. Do Not discard the excess dough. Place the larger circleon the
baking pan and center the brie on top of the dough. Top the brie with the
sauce and pecans. Bring the dough up the sides of the brie and press firmly
so it will stay. Brush the edges of the dough with the egg.

Brush the outer edges of the smaller circle with the egg and place over the
top of the brie with the moistened side down. Press the two edges of the
dough together firmly to seal. Brush the top and sides with the egg. Cut
designs or patterns from the dough scraps and decorate the top of the
pastry. Finishing by again brushing with the egg. Place, covered, in the
refridgerator for at least 30 minutes before baking.

Preheat oven to 375F.

Bake for 20 - 30 minutes or until golden brown. Let stand for 10 minutes
before serving.

Transfer the brie to a serving dish by carefully picking it up along with
the aluminum foil. Place decorative platter, trim away the excess foil and
serve.

Place cream cheese on a plate.

Pour sauce over cream cheese.

Serve with crackers.
