Jim: I'm jealous you can process that many Savinas in a day. Boy, I can't wait to see your set-up! Here in my "commercial kitchen", I have a small, continuous feed Robot Coupe food processor which I've used to process the 200 gallons of peppers we picked - maybe 200,000? - for our sauce and salsa business. Boy, has it taken a long time! The worst part was grinding the habs - the fumes were so acrid they burned my lungs, and I had to go out and buy a paint respirator - one of those two-gun, charcoal-filtered jobbies - just to get through!
