Mike,
   you might try using ground fresh or dried turmeric.
it'll certainly give a distinct yellow color, and will also add some
turmeric flavor to your sauces.
saffron will also add yellow coloring, but the strong distinct taste of
the spice may not exactly complement your peppers.
   if you use corn, stay away from the "Starlink" variety ...
