Thanks for your concern, and the peppers turned out wonderfully. They were totally dry in about 4 hours, and non-scorched. (I had sliced them in half to begin with) I intend to use this method in the future. It was so easy to watch and tend on a rainy day. Whenever the smoke stopped flowing over the chiles, I moved afew more live coals from the adjacent fire under my set-up, threw afew smoke-inducers on top, and voila -- more smoke over the jalapenos.
