Invented this while on vacation at a rustic cabin in West Virginia. The prototype was cooked in the oven of a wood stove... Cheesy Rolled HotLoaf Ingredients: 2 1/2 Lb lean ground beef 1 medium onion, diced 1 bell pepper, diced (I like de red ones) 4 or 5 cloves garlic, chopped 1/2 cup seasoned bread crumbs 2 tbsp. dijon mustard 1/4 cup catsup 2 eggs 1 tbsp worcestershire sauce 3 or 4 (or more!) minced habaneros salt black pepper (you figure it out...) 8 oz. sliced or shredded aged swiss cheese Preparation: 1. Mix up everything except the cheese. Spread it on a piece of wax paper or plastic wrap so that it is about 10 inches wide and 24 inches long and about 3/4ths to 1 inch thick. 2. Lay the cheese on top of the meat mixture, leaving about an inch of the mixture uncovered around the edges. 3. Starting at one end, use the wax paper to roll the loaf jellyroll style much in the way you would roll a Giant beef and pepper sushi roll! 4. Pat and seal the ends and shape into the standard loaf format. Cook at 350 for about 45 minutes to an hour. This is the basic loaf recipe, feel free to use your standard meatloaf glazes or sauces, or just cook "Nekkid"
