Here are some great mixtures for that Chipotle powder.

  Amount  Measure       Ingredient -- Preparation Method

- --------  ------------  --------------------------------

   2      tablespoons   Chipotle powder

   2      teaspoons     Ground cumin

   2      tablespoons   Paprika

   1      tablespoon    Dried oregano

   1      tablespoon    Ground coriander

   1      teaspoon      Cayenne pepper

   1      tablespoon    Garlic powder

   1      teaspoon      Crushed red pepper

   1      tablespoon    Salt

   1      teaspoon      Black pepper


Combine all of the above ingredients thoroughly.


This recipe yields 1/2 cup

   Chili Powder


5tablespoons ground Chipotle

1tablespoon ground hot chile, such as picquin or chiltepin

1-1/2tablespoons ground cumin

1-1/2tablespoons ground oregano

1-1/2tablespoons garlic powder

1teaspoon salt

   1 1/2  ounces        Chipotle**

   1 1/2  tablespoons   cumin seeds -- 

                        (toasted and then ground)

   1 1/2  tablespoons   garlic powder 

   1      tablespoon    ground mexican oregano
** to make hoter add some smoked Habanaros 
or
Cayenne

 Place blender or coffee mill and pulverizethe pods briefly until you have 
powder.  Add the remaining ingredients and blend until combined.  Store the 
chili powder in a jar or other covered container for up to 3 months.
