I came across this message in another area and I was stumped. Has anyone here heard of a pepper sauce/oil/extract called True Cap? I assume that is the spelling, I didn't see the container. I was trying out a different Indian restaurant, Jewel of India, in my area. When I went to order Gosht Vindaloo I was asked the standard mild, medium or hot. I replies, "it is Vindaloo, I assumed it would be hot." The waiter said he had something for me to try, he would be right back. He comes back with a teaspoon of what looks to be Chinese Hot Oil. It doesn't smell like that, the smell is wonderfully aromatic of smoky chilies. I stick my finger in the oil, the first taste is one of full bodied chilie, with a tinge of sweetness. The heat slowly starts to build up and the flavor is traveling all around my mouth. This is the GREATEST rush of heat and flavor I have experienced in a very long time. Now the cook has come out, he wants to see my reaction, I immediately have to know what this stuff is, "True Cap" he responds. He asks me what I think, was it too intense? Did I taste anything beside hot. I start describing what is going on in my mouth, and he beams a huge smile. "You pass" he says. And he heads to the kitchen. The waiter returns and says my vindaloo will be laced with True Cap. The cook never puts it in a new customer's dish without this trial. Larry didn't try it straight up, but he did have some vindaloo, with lots of water, naan, and a couple of teaspoons of sugar when it got too hot for him. He broke out in a sweat. He announced he hadn't tasted anything like it since he was in Bombay. The cook came back out and we continued to chat about the food, others he had tested, and he mentioned this guy who dipped the naan in the True Cap and just kept asking for more. He had never seen anyone eat such heat he said. I laughed and said I like to delight my tastebuds, not burn them out. But I had to try this dipping thing. WOW, was it ever great. I finished the meal with a mango lassi. We had leftovers, so I can hardly wait to see how the sitting has effected the vindaloo. We also have some chicken briyani and steamed rice to go with it.
