Hi all, I make a habanero sauce and have been following the same recipe for years. My last batch had a problem that has stumped me. About 6 of the 40 bottles that I made had an exploding problem. After two or three months, a bottle that was used regularly would blow the cap off when unscrewed. The contents acted like it was carbonated. It fizzed up like a shaken soft drink. I have never refrigerated the bottles before, so these were not. Most of them were inside, so were not exposed to extreme temps. I have no idea what caused this. I'm afraid to open a bottle. Has this happened to anyone else? What could have caused it? Ingredients in order of quantity; habs, onion, vinegar, lime juice, garlic, rum, honey. Thanks, Kenny
