Heck -- we make pepper jelly up here in the tundra of North Dakota. Some of us even use straight Habanero or Cayenne peppers. I made Christmas Jelly this year -- Just for a few jars to give as gifts. We used Ripe Jalapenos for the red layer and Green Habs for the green layer. Poured in layers and let it set then filled with other color. Merry Christmas Nels in ND > water.
