I just made a wonderful dish that I'm delighted with. Costco sells a marvellous raspberry and chipotle sauce. It's not very hot but is richly flavorful. I cooked country ribs for 10 minutes in a pressure cooker along with lots of sweet herbs and spices: nutmeg, cinnamon sticks, anise, grated orange rind and the like plus a little water. Then I put the ribs, now tender but still needing to be browned in a baking pan and baked for 15 minutes in a 500 degree oven, then finally added the chipotle sauce, plus vinegar to moisten the pan and returned them to the oven to finish baking and browning.
