La Costeņa is my current favorite. This last weekend I put a can of them in the food processor, turned it into a paste, and added a little vinegar and bottled it. I've been pouring it on everything! I even tried popcorn: put oil in pan add some chipotle pureé add popcorn Turn on high, and when popping begins, shake the pot over the burner until popping is over.
