This was tonight's dinner. It was quite good. I think the meat could've been a bit softer but the flavor was good. It was mildly spicy. Add extra heat if you wish (and I know you will.) I served it with baked hush puppies (trying to watch the weight a bit but this was a splurge meal tonight. Not the ordinary.) and sauteed green beans with garlic. Yum. * Exported from MasterCook * Crockpot Barbecue Beef Recipe By : RisaG Serving Size : 6 Preparation Time :0:00 Categories : Crockpot Meats Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3 lb boneless chuck roast -- trimmed of fat 1 tbsp vegetable oil 2 cups water 1/2 cup ketchup 1/2 cup picante sauce 1 lg onion -- chopped 1 lg clove garlic -- chopped 1/4 cup white vinegar 1/4 cup worcestershire sauce 1 tbsp mild chili powder 1 tsp kosher salt 1 tsp 5 peppercorn mixture -- ground 2 lg carrots -- sliced Place onions and carrots in the bottom of crockpot. Heat a cast iron pan on the stovetop over medium-high heat. When hot, sprinkle chuck roast with a bit of salt. Add oil and brush all over pan. Place roast in pan and sear on both sides, until browned. Remove and add to crockpot. Mix together the rest of the ingredients and pour over the roast. Set on HIGH. Cook for 4 hours.
