[CH] Recipe: red curry tofu with peas, cashews and tomatoes

This is in appreciation of whoever it was here that turned me on to
Patak's curry paste.   It would be nice for an Imbolc/Brighid potluck. 

Red Curry Tofu with Peas, Cashews and Tomatoes

Servings:  4    

=/-  1  lb       firm tofu, drained and cut in 1" cubes
       2 Tbsp  lime juice
       1  tsp     ground turmeric
        4 tsp     olive oil
        2 c        onion, thinly sliced
        1 cl      garlic, minced or smashed (yes, .Nisaba, just one :))
                     OPTIONAL: small red chiles, split  lengthwise, to
taste  
        1 c        light coconut milk
1/4-1/2 c       cashews, walnuts or peanuts, coarsely chopped  
 abt. 2 Tbsp red curry paste (see below--it's not hard to find.)
         1 c       fresh green peas, shelled  -OR- frozen peas,  thawed
         1 c       tomatoes, diced  (yellow or orange ones are pretty)
         3 c       hot cooked rice, pref. basmati or jasmine     
         1 c       cooked bulghur   
                     Salt and black pepper to taste
                      
Heat half the oil in a large nonstick skillet over medium-high heat;
tofu is bad about sticking to the other kind   Add tofu; sauté until
liquid from tofu is evaporated (about 3 minutes).  Remove tofu from pan;
sprinkle with lime juice and turmeric.

Heat oil in pan over medium-high heat.  Add onion and chiles; sauté 5
minutes.  Add tofu and cook 7 minutes, or until golden.   Last 1-2
minutes of this, add garlic.  

Combine milk and curry paste; add to pan.  Add nuts, reduce heat, and
simmer 3 minutes.  Add peas and tomato; cook 2 minutes. Season with salt
and pepper and serve over rice mixed with bulghur.   If desired, garnish
with cashews, orange wedges, fresh basil or steamed snow peas.   

RED CURRY PASTE is nothing like curry powder.  It's simultaneously mellow
and tangy, full of tamarind, ghee and other good stuff that's not in the
powder;  you can't sub one for the other and get anything like the same
result.  Fortunately, many larger supermarkets now carry it. 	Meijer's
has the full line of Patak's, an excellent brand that ranges from very
mild to middling hot.
