[CH] Last Night's Dinner - Oven Fried Fish

I served this with Oven Fried Potatoes, had much smaller portions than I
usually do. It was really good. The habanero mustard really added a nice
kick.

Oven Fried Fish

2 fish fillets (thinner than fatter) -- any kind
egg substitute (about 1/3 cup)
2 tsp Habanero mustard or other mustard
1/2 cup cornflake crumbs
1 tbsp Mrs Dash Tomato Basil Garlic
1 tsp garlic powder
In a shallow pan, combine the cornflake crumbs, Mrs Dash and the garlic
powder. Set aside. Place egg substitute in another shallow pan.
Wash the fish fillets and dry well. Sprinkle with salt. Brush with mustard.
Dunk in egg substitute. Let excess drip off. Dredge in cornflake crumb
mixture.
Preheat oven to 400°F. Either spray a cookie sheet with nonstick spray or
place a piece of parchment paper on the sheet. Place fish on sheet. Bake for
25 minutes, or until crisp and flaky. Turn over when half done and brown and
crispy on both sides.
