I'm not convinced my taste buds are all that accurate any more, but I
find that green serranos have a similar taste to jalapenos. The heat
is probably halfway between a jalapeno and a hab. Once ripened to a
bright red, of course, they get  bit hotter and develop a more
distinctive taste.
