Well here's mine: Crawfish in garlic cream As usual exported from Mike's head and all measurements approximate 1/2 pound cooked crawfish tails 1/2 onion finely chopped 1-2 cloves garlic chopped 1 shallot chopped 1/2 cup Parmigiano Regiano (sp) grated 1 bunch green onions chopped, green part only 2 tbs butter linguine noodles Creole spice (paprika, onion powder, garlic powder, red white and black pepper, thyme, oregano) Boil pasta Melt half of the butter in a medium hot skillet. Add onion and shallot, saute until onion is clear do not brown. Add garlic and about 1 tbs of Creole spice. Add mudbugs and cream. Add salt if necessary but remember the cheese is salty. Cook over medium heat to reduce cream. Add cheese, green onions, and remaining butter. Toss with pasta. Serve topped with more cheese and spice. To mine I added hab powder. Not bad, but it ain't diet food.
