My experience with these guys is strictly in Mexico and Mexican recipes, where they are usually if not always roasted, peeled, and crushed/processed for some form of salsa verde. May I ask if eating them raw (in salads? sliced for a snack? like an apple?) is common in some ethnic cuisine? We eat them raw about 90% of the time. The only time we used cooked ones is in winter. We don't peel them, either.
