A few (4?) years ago at the IN Firey Foods Festival, I bought a pound of Jim Campbell's Jalapeno Peanut Butter Fudge. 'Twas absolutely wonderful. He also had Chocolate Habanero, which I bought a pound of as well, but the PBJ ( :) ) fudge was a wonderful combo. Apparantly not enough people liked it for him to keep selling it, though. I've recently (Xmas time) tried to re-create what I remember, but have not yet gotten the quantities right or something. I tend to get either too bland or too grassy. Perhaps I'll try Chipotles instead.... Anywho, Cayenne and PB also go well together. I occassionally make a peanut butter sauce that's good on chicken or those little crunchy chineese noodles that's mostly peanut butter, cayenne powder, and a little soy sauce. Peanut Butter goes with a lot of things - pb & salty, pb & hot, pb & sweet, and best of all, pb & hot & sweet. Some day I'll get PBJ fudge to work right....
