I love this recipe because it has a lot of heat, but the flavor of the mango comes through, and, by varying the amount of sugar, it has been enjoyed by even the wimpiest of palates! Cover and simmer 3-4 hours <<<< very important This takes some time to cook, but it is worth the wait! Directions for Cooking the Wings: Dust the wings with Cajun seasoning before I broiling. You can also grill or fry the wings. To broil the wings place on a broiling pan, season and broil until a toasty brown (10 to 20 minutes). Turn and continue to broil until done. When wings are cooked, pour the sauce into a large, heat safe plastic bowl with a lid, toss in the wings, close the lid and shake until the wings are well coated and ready to serve. Reserve sauce cane be refrigerated and re-used.
