[CH] Sunday's Meal - Crockpot Bean Soup & Chile Macaroni

This was Sunday's meal. It was really good. DH loved the flavor of the broth
in the bean soup. I liked it too. The Chile Macaroni was an idea I thought I
would place on the table next to it and it was really good too. I served the
soup, the macaroni and some guacamole (had 2 avocados going bad). Great
meal.

Spicy Crockpot Bean Pot

1 cup dried pinto beans -- rinsed & picked over
2 tsp ham soup base -- in
2 cups water
2 tsp tomato paste -- mixed in
1 1/2 cups water
1 lg onion -- chopped
1/2 green bell pepper -- chopped
1 jalapeno pepper -- chopped
2 lg cloves garlic -- minced
2 tbsp cilantro -- chopped
1/8 cup brown sugar
1 tbsp ground chile molido
1/2 tsp salt
1/2 tsp bay leaves -- crushed
1/2 tsp mexican oregano -- crumbled
1/4 tsp ground cumin
1/4 tsp rosemary leaves -- crushed
1/4 tsp celery seed
1/4 tsp ground thyme
1/4 tsp ground marjoram
1/4 tsp dried basil
1/4 tsp Penzey's Sweet Curry Powder
2 whole cloves
1/2 cup dry sherry
Place all ingredients, except dry sherry, in crockpot. Set to LOW. Cook for
10-11 hours until beans are soft. One hour before soup is cooked, add
sherry.

TWO CHILE MACARONI

1 tbsp vegetable oil
1 poblano chile -- diced
1/4 cup red bell pepper -- diced
1 sweet onions -- chopped
2 lg cloves garlic -- minced
1/2 cup sweet corn kernels
2 cups cooked macaroni
1 anaheim chile -- roasted & pureed
1/2 cup fat-free half-and-Half
1/4 cup lowfat milk
1/2 cup Pepper Jack cheese -- shredded
salt and pepper -- to taste
Heat oil in a heavy pan over high heat. Saute the diced poblano, red pepper,
sweet onion and garlic just until tender. Add the coron and saute. Add the
cooked macaroni, anaheim chile puree, half-and-half, milk and cheese. Stir
until all ingredients are thoroughly mixed. Season to taste with salt and
pepper. Serve.
